About Our Pizza
Our New York Style Pizza crust is "soft and crispy and as light as air".
The process starts with an old world sour dough starter called a "Levain." This is the magical element that separates our pizza from the others.
We use high protein wheat flour, a top secret water filtration system, kosher salt and Italian extra virgin olive oil.
Then, our dough goes through a 72 hour "slow fermentation process" - this is where our unique flavor and airy texture comes from.
We use PREMIUM Ingredients to top our pizza:

Each Graze pizza is HAND TOSSED to keep the air in... We bake our pizza at 500 Degrees in a 30 year old Bakers Pride Y800 oven - because they just don't make them like they used to. This oven is over 7ft. wide, 5ft. deep and weights over 3000 pounds. Don't worry we had the Iowa Hawkeye offensive line carry it into the building.

Graze Mac & Cheese is made with Elbow Noodles and LOTS of cheese sauce.
Our Cheese Sauce is made with Colby, Swiss Cheddar and Parmesan Cheeses with lots of cream.
The noodles are cooked and the sauce is added, right before it is loaded into your take out package.
Note: Some of our friends add Lip Sauce to their Mac... hmmm.
Dim Sum Green Beans
We start with FRESH green beans and flash fry them for 10 seconds until they just start to wilt.
Then we toss them in our delicious Dim Sum Sauce, which is made with soy sauce, sesame oil, ginger, garlic, green onions and sesame seeds.
These green beans are so good - that even little kids LOVE them... It's a great way to get people to eat their veggies.
