Great Tacos start with a Great Tortilla:
Our Tortillas are actually sourdough.
They are made with Maseca (Nixtamalized corn flour) and high gluten flour, plus Manteca (smoked pecan wood bacon fat) and sourdough starter. We age the tortilla dough for 3-4 days to develop flavor. ​​ Our tortillas are slightly thicker than other tortillas, because they are "full of air".
Each tortilla is rolled by hand and grilled fresh. This labor of love is not easy... But the final product is Excellent.​​

The meat is the main ingredient in a great taco.
Gringo Chicken:
Chicken thigh marinated for 24 hours in a mixture of herbs, spices, olive oil and Modelo. The chicken is grilled to order, and served family style... so you can build your own tacos.

Pork Carnitas:
Fresh Iowa Pork Shoulder, slow braised in (Manteca - Pork Fat) until it is tender and juicy and literally falling apart. (Think Pulled Pork - but better) Then, it is grilled to order - to give it the right amount of a crunch. ​
Bronzed Shrimp:
Grilled shrimp in garlic butter and Seafood Spices.

Smoked Pastrami:
We tried every type of beef for our steak tacos and couldn't find one that fit our needs. Then, we discovered Pastrami and a star was born - we think you will LOVE this taco.

We make three types of salsa

Mild Salsa Roja
Spicy Salsa Madre

Spicy Salsa Madre is made with roasted tomatillos, serrano peppers, onion, garlic and smoked orita peppers. It's the perfect blend of spicy and smokey - for our tacos.
