Graze Tacos Start with the Tortilla:
We make two types of tortillas - Flour & Corn
Our Flour Tortillas are made with (Manteca) bacon fat & lard
Our Corn Tortillas are made with (Maseca) yellow corn flour. ​
Each corn tortilla is rolled by hand, pressed and grilled fresh.
This labor of love is not easy... But the final product is Excellent.​​

The Key to Great Tacos That Travel...
Keep the meat separate from the tortillas until it is time to make your tacos...
We recommend using both flour and corn tortillas, the flour gives its strength and the corn tortilla provides flavor. Yum!​​​​

Gringo Chicken:
Gringo Chicken is marinated for 24 hours in a mixture of herbs, spices, olive oil and Modelo. The chicken is grilled to order, sliced and served family style... so you can build your own tacos.

Pork Carnitas:
Fresh Iowa Pork Shoulder, slow braised in (Manteca - Pork Fat!) until it is tender and juicy and literally falling apart. (Think Pulled Pork - but better) Then, it is grilled to order - to give it the right amount of a crunch.
